When I think of a traditional gyro, I think of a meat, like chicken, lamb, or beef along with lettuce, onion, tomato, and tahini sauce wrapped like a burrito in a thin pita bread. Our version of this Middle Eastern favorite looks a little different. The pita bread at Trader Joe’s is a little too thick for my liking so I go with the flat bread and just pile the ingredients on top and fold it in half like a soft taco. I know, you’re probably thinking, well, that’s not a gyro then. Well, you’re probably right, technically speaking, but this is my recipe, so I get to call it whatever I like. I mean, I guess I could’ve called it a Lebanese taco.
We made this tonight, and my wife told me this is her favorite dinner. That was a real compliment for me, because as everyone in our home knows, she’s a much better cook than I am. We share the cooking responsibilities and we each know where our strengths lie. She handles the meals she loves and then passes the hot pads to me when the situation calls for it. We work really well together when it comes to planning and cooking our meals.
A common theme with a lot of our cooking is that the ingredients are pretty simple and our dinners don’t take that long to prepare, but they are always full of flavor. The chicken in this dish is overloaded with spices and garlic and the Classic Greek Salad and Tzatziki Dip from Trader Joe’s compliment it perfectly.
This recipe feeds about 4-5 people.
Ingredients:
3-4 boneless chicken breasts
Olive oil
1 container Trader Joe’s Classic Greek Salad
1 tub Trader Joe’s Tzatziki Creamy Garlic Cucumber Dip
2 packs Trader Joe’s flat bread
6 cloves garlic, minced
Season to taste with the following spices from Trader Joe’s:
Dried parsley flakes, pink salt, turmeric, cumin, cayenne pepper, paprika, Ajika Georgian seasoning blend, and black pepper
Directions:
Preheat oven to 375 degrees. Lightly coat a large baking dish with olive oil and place chicken breasts in dish. Season breasts with combination of seasonings listed in the ingredients and place dish, uncovered in oven for 13 minutes. Turn chicken over, season again and cook for another 13 minutes. Remove dish from oven and cut chicken breasts up into bite size pieces. Add minced garlic and toss chicken in the dish and place back in the oven for another 7 minutes. Remove from oven and let cool for a couple of minutes before serving.
To prepare gyros, grab a piece of flat bread, warm it on top of the stove burner, place some chicken on top, add some of the Classic Greek Salad and Tzatziki Dip to the top of the chicken and you’re ready to enjoy. Tonight, I even added a few pitted kalamata olives and served it with a can of Trader Joe’s Dolmas (stuffed grape leaves).
The Classic Greek Salad is the VIP here. It’s loaded with everything you could ever imagine adding to a gyro: red bell peppers, Greek olives, red onion, feta cheese and an amazing red wine vinegar dressing. Top that with the Tzatziki Dip and it’s heaven on a plate!
It’s also important to not fuss over how much seasoning you add to the chicken. I just sprinkle it all on without paying too much attention. Once the chicken is pretty well coated with spices, you’re good.
